zetacore (crosschain) : unit tests for process logs

Describe the Issue

• Add unit tests that call EVM directly to create transactions.
• Use the response from the transaction to call process logs.

Expected Outcome
Unit tests for process logs which are able to test all possible edge cases , specially for Withdraw tx

But actually better to track this one as a single task.

Note: @kingpinXD I think it can be great, when creating a new task if you can have a look at the list of epics here https://github.com/orgs/zeta-chain/projects/10/views/1 and see if the task can be included into one. This will simplify tracking the issues.
